Résumé
La malnutrition et les carences en micronutriments, notamment en fer et en zinc, demeurent des défis majeurs de santé publique en République Démocratique du Congo (RDC). Le soja (Glycine max L.) constitue une source importante de protéines végétales et de micronutriments, mais sa valeur nutritionnelle peut être affectée par la présence de facteurs antinutritionnels limitant la biodisponibilité minérale. La présente étude visait à évaluer la variabilité des facteurs antinutritionnels, des composés phytochimiques bioactifs et de la composition minérale de quatre lignées mutantes de soja (Diamuini 1, Diamuini 2, Lutaladio et Luyindula) comparativement à la variété parentale TGX1830-7F. Les teneurs en oxalates, saponines, flavonoïdes, phytates et tanins condensés ont été déterminées par des méthodes gravimétriques, titrimétriques et spectrophotométriques, tandis que les concentrations en fer (Fe), zinc (Zn), manganèse (Mn) et cuivre (Cu) ont été mesurées par fluorescence X (XRF). Les données ont été soumises à une analyse de variance (ANOVA), suivie du test de Tukey HSD (p < 0.05), ainsi qu’à des analyses multivariées incluant l’analyse en composantes principales (ACP), la classification hiérarchique ascendante (CAH) et l’analyse des corrélations de Pearson. Les résultats ont révélé des différences hautement significatives (p < 0.01) entre les génotypes pour les oxalates, flavonoïdes, phytates et tanins condensés. La variété Diamuini 2 présentait les teneurs les plus élevées en oxalates (44,37 mg/100 g MS) et en tanins condensés (4,76 mg/100 g MS), tandis que Lutaladio se distinguait par la plus forte concentration en flavonoïdes (10,97 mg /100 g MS) et les plus faibles teneurs en phytates (76,03 mg/100 g MS). TGX1830-7F présentait les concentrations les plus élevées en fer (89,49 mg/kg) et en zinc (64,81 mg/kg). L’ACP a expliqué 77,2 % de la variabilité totale et a permis d’ identifier trois groupes distincts de génotypes . La CAH a confirmé cette structuration en regroupant Lutaladio et Luyindula dans un cluster caractérisé par une meilleure qualité nutritionnelle. L’indice nutritionnel global a classé les variétés dans l’ordre suivant : Lutaladio > Luyindula > TGX1830-7F > Diamuini 1 > Diamuini 2. Ces résultats démontrent que la mutagenèse induite a généré une variabilité nutritionnelle importante chez le soja et identifient Lutaladio comme un génotype particulièrement prometteur pour les programmes de biofortification et d’amélioration de la sécurité alimentaire en RDC.
